8 T Basic Rib Rub (Recipe follows)

2 bay leaves
1 can dark beer

Take the basic rib rub (or any rib rub) and work it into the ribs the day before. I usually add extra garlic powder and paprika to the rub. Let the ribs sit overnight in the refrigerator with the rub on wrapped in foil. To prepare take a shallow/medium baking pan/sheet and pour a can of dark beer into the pan along with a couple of bay leaves. Arrange the ribs on the pan so that they DON'T overlap. Cover the entire pan with foil and bake the ribs at 350º for 1 hour. Remove the ribs from the oven and take off the foil. Let them rest for 30 minutes. Lather up both sides of the ribs with your BBQ sauce. You can then place them in the refrigerator for about 1 hour before serving time. Get your grill nice and hot before placing the ribs on them. The secret is that you want to cook them on LOW or INDIRECT heat, slowly. If you've got a gas grill, turn it on low. If you're using charcoal, move the charcoal to one side and place the ribs on the other side. Flip them occasionally. I don't add more sauce, but that's up to you. In about 1 hour (on low/indirect) heat your ribs will be ready and the compliments will follow. Enjoy!
