Ingredients: 1 spray cooking spray ½ c. chopped apples 1 large egg 1 tsp. vanilla extract 1 tbsp. vegetable oil ½ c. unsweetened applesauce 1 c. buttermilk ¼ tsp. table salt ¼ tsp. baking soda ½ tsp. ground cinnamon 2 tsp. baking powder 2 tbsp. sugar 1¼ c. all-purpose flour

Directions:Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next five ingredients in a large bowl; stir with a whisk. Combine buttermilk and next four ingredients in a small bowl; stir with a whisk until smooth. Add buttermilk mixture to flour mixture; stir until smooth. Stir in apple. 2. Spoon about 1⁄4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked. |

Notes: This recipe is adapted from a Weight Watchers one (these pancakes are 2 points per pancake on the old Points system). Even though they're WW, my family ADORES them. My hubby always asks me to make "those diet pancakes." I like to get the dry ingredients ready the night before, then throw them together for a quick breakfast in the morning. They also freeze really well. Just cool them completely on a rack and then stack them in a freezer bag with little squares of wax paper between them. Pop the frozen pancakes in the microwave for a really fast and delicious breakfast.
