1 brisket that serves 4 - 6 people
Water for braising
1/2 to 3/4 cup soy sauce
Your favorite barbecue sauce.

Place brisket (fat side up) in a roasting pan and fill the pan with water up to the level of the top of the brisket. Add a LOT of soy sauce - 1/2 cup, at least, possibly more. Braising water should be dark brown. Cover tightly and place in a 325 degree oven for approximately five hours. (Cook time may be adjusted downward for smaller briskets.) About an hour before the cooking time is over, turn the brisket over, re-cover and return to the oven. Occasionally check for tenderness with a fork. For the last 15 - 20 minutes of roasting, uncover the pan and brush barbecue sauce over the brisket.

When the brisket is tender, remove from oven, place on a cutting board, and slice diagonally across the grain of the meat. Drizzle some of the cooking "juice" over the sliced meat. Serve with beans, kosher dills, potato salad or beef Rice-A-Roni, extra barbecue sauce, and hot bread.
