Dough
2 eggs,
2 cups flour,
1/2 teas salt,
a little less than 1/2cup water( you can use 1/2 cup of evaporated milk or 1/3 cup sour cream instead), ( to make enough for the 10lbs of potatoes use 12 eggs and 12 cups flour and around 3 cups of water) dough should not be sticky)
Filling
10lbs potatoes,
2 to 3 bunches of green onions chopped,
4 lbs mild cheddar or Colby cheese shredded,
11/2 boxes of margarine

Directions:
Directions:
cut the eggs into the flour (or use mixer), add salt and liquid, knead or use mixer to dough is easy to work with,let rest 10 minutes.
Filling: boil 10 lbs potatoes, drain, pour in the melted margarine and chopped onions that have been sautéed, add cheese, salt to taste, mix
Roll out dough in circles fill with filling mixture pinch ends to make it look like a large potsticker,
boil in salted water until pierogis come off the bottom of pan and float about 5 minutes, drain, put in melted butter or margarine so they won't stick together, fry in melted butter or Margery, serve with sour cream on top and take a lowering cholesterol medication
