4 eggs
4 tbs. sugar
6 tbs. melted shortening
31/2 c. milk
2 tsp. salt
2 tsp. vanilla extract
3 c. flour
7 tsp. baking powder
1 pint fresh blueberries (optional)

Directions:
Directions:
Heat waffle iron.

In a large bowl, beat together the eggs and the sugar until fluffy. Pour in the shortening, milk, salt and vanilla extract, and mix until well blended. Add flour and baking powder, and stir well. Fold in blueberries.

Add batter to waffle iron, and cook according to manufacturer's directions.

These waffles freeze fabulously. Simply bake the waffles, and cool completely in the fridge. Once cool, place waffles in a single layer on a cookie sheet, and freeze. After waffles have frozen, place in zip-top freezer bags. To reheat, simply toast waffles in a toaster!
