1 medium yellow onion, chopped
1/2 cup green bell pepper, chopped
1 T butter
2 16-oz pkgs frozen squash
1 cup grated cheddar cheese
1 tsp salt
1/2 tsp black pepper
1 10-oz can Ro-Tel tomatoes, drained
1/2 cup crumbled Ritz crackers mixed with 1/2 cup Parmesan cheese

Directions:
Directions:
Preheat oven to 350º.
In a large skillet, saute the onion and bell pepper in butter for 3 or 4 minutes. Add the squash and cook until tender. Drain the squash and add the cheddar cheese, salt and pepper. Fold in the tomatoes.
Place in a buttered 2-qt casserole and bake for 20 minutes. Remove from oven and top with crackers and Parmesan cheese. Dot with butter. Bake another 20 minutes or until brown and bubbly.
Serves 8.
