1 head cauliflower
1 cup shredded aged Gouda cheese
1/2 tsp baking soda
1 t sea salt
Parmesan cheese

Directions:
Directions:
Boil or steam coarsely chopped cauliflower in unsalted water until tender. Drain well. Add salt. While still very hot, blend or mash cauliflower and baking soda. (A stick blender works well.) Once cauliflower is pureed, add cheese, 1/4 cup at a time, whipping as you go. Puree should be light and creamy. Add a little olive oil if you like, for extra depth. Top with some grated Parmesan cheese.
