4 c chicken broth
1 c sliced carrots
1/3 c uncooked wild rice
1/3 c sliced green onions
1/2 tsp thyme
2 T butter
3 T flour
1 c milk
1 1/2 c chopped, cooked chicken (like Rotisserie)
1 T dry sherry

Directions:
Directions:
Mix broth, carrots, rice, green onions and thyme. Bring to a boil and reduce heat. Simmer for 30 minutes or until rice is tender.

Meanwhile, in a separate saucepan, melt butter and stir in flour.

Add milk. Cook and stir until bubbly.

Add milk mixture, chicken, and sherry to the rice mixture.

Heat thoroughly.

Add salt and pepper to taste.

Serves 4, freezes well.
