1 9" prepared pie crust, baked
3 large fresh tomatoes, chopped
1 vidalia onion, chopped
Several fresh basil leaves, chopped
1 T fresh chives
1 cup mayonnaise
1 cup sharp cheddar cheese, grated
1 tsp salt
1/4 tsp pepper

Directions:
Directions:
Preheat oven to 350º.
Place tomatoes in colander. Sprinkle with salt and let sit for several minutes. The salt helps drain the tomatoes. Mix together the tomatoes, onions, pepper, basil and chives in the pie shell. Blend mayo and cheese thoroughly. Spread evenly and completely on top of pie. Bake 35 - 45 minutes or until top is lightly browned.

Fresh vegetables and herbs are really the key to this recipe.
Because the pie may dribble in the oven, place the pie pan over another baking sheet.
