2 large lemons
4 eggs, well beaten
2 cups granulated sugar

Directions:
Directions:
1) Slice lemons paper-thin (including the rind).
2) Combine sugar and lemon (mix well).
3) Let stand for 2 hours or longer, mixing occasionally.
4) Add eggs to the lemon mixture and mix well.
5) Turn ingredients into a 9" pie shell, arranging lemon pieces evenly, then cover with a top crust.
6) Cut several slits near the center of the top crust.
7) Bake at 450ºF for 15 minutes, then reduce the heat to 375ºF and bake for about 20 minutes or until a knife inserted near the edge of the pie comes out clean.
