1/2 lb. + 1 Tbls. butter
8 Tbls. powdered sugar
3 cups flour
2 egg yolks
1 tsp. rum extract
pinch of salt
1 pkg. of caramels
1/2 cup water
2 cups finely chopped Spanish Peanuts with skins
Lots of toothpicks one for each cookie

Directions:

Cream butter, sugar, yolks, rum and salt together. Mix in all the flour and mix well. Shape into small melon sized balls. Place on cookie sheet and bake for 12 to 15 minutes at 375º. Put a toothpick into each cookie being careful not to break the cookies. Melt caramels and 1/2 cup water. Add water in a little at a time just enough to make the caramel mixture soft. You may not need all the water. Dip the cookie on the toothpick into the caramel then immediately into the chopped nuts. I then put them into little paper cups like a muffin cup.
