1 pie crust

FILLING:
3 eggs
1 1/4 c sweetened condensed milk (1 can)
1/2 to 3/4 tsp finely shredded lime peel
1/2 c water
1/3 c lime juice
green food coloring (optional)

MERINGUE:
3 egg whites
1/2 tsp vanilla
1/4 tsp cream of tartar
6 T sugar

Directions:
Directions:
Prepare pie crust in 9" pie pan. Seperate eggs; set whites aside. Beat egg yolks, gradually stir in sweetened condensed milk and lime peel. Add water, lime juice and coloring. Mixture will thicken. Spoon filling in pie shell. Bake at 325º for 30 minutes.
Combine egg whites, vanilla and cream of tartar. Beat for about 1 minute until soft peaks form. Gradually add sugar one T at a time. Beat for about 4 minutes until stiff peaks form. Be sure to seak meringue against sides of pie crust. Spoon on top of pie. Bake in 350º oven for 15 minutes.
