6 cups zucchini cut into 1/2" slices
4 Tbsp. butter
3/4 cup shredded carrots
1/2 cup finely chopped onions
1 can celery soup
1/2 cup sour cream
1 1/2 cup croutons (seasoned)

Directions:
Directions:
Cut zucchini into 1/2 in. slices. Parboil zucchini in salt water until fork tender.

In separate pan: Saute 4 T butter with shredded carrots and finely chopped onions. Combine this with can of celery soup, and sour cream and 1 1/2 c croutons. Drain zucchini and combine zucchini with the rest of the ingredients. Put mixture in casserole dish and top with one cup of croutons and dot with butter.

Bake at 350º for 30-40 mins.
