1/3 cup shortening or margarine
1/2 cup sugar
2 eggs
1 3/4 cups sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. soda
1 cup mashed very ripe bananas
1/2 cup walnuts

Directions:
Directions:
Preheat oven to 350º.

Cream together shortening and sugar; add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts.

Pour into well-greased 9x5x3" loaf pan. Tent with foil until the last 10-15 mins of cooking time. Bake in moderate oven 45-50 mins. or until done. Don't over cook. Remove from pan; cool on rack. Wrap and storage overnight.

I have been making this banana bread since I was a young girl. My kids love it! Great with a cup of coffee, it makes you feel all warm and cozy!
Recipe can be doubled and cooked in a cake tube pan-if you have lots of ripe bananas that are ready to be thrown out. It's also good if you add a little more bananas-it makes it more moist (but not to many that it won't get done in the middle). ENJOY!
