2 racks of ribs, I like baby back
Rib rub your favorite
yellow mustard
apple juice
honey
favorite barbecue sauce
wood chips soaked 30 min (I like fruit wood, can mix with hickory or mesquite)

Directions:
Directions:
Up to 24 hours before grill, remove membrane from ribs, and spread mustard over, then add rub.
Cut rack in half or thirds.
Refrigerate.
Spray grill and racks.
Day of grill, BGE to about 250º, add wood chips.
Ribs on rib rack, over a drip pan with apple juice.
Takes about 3 hours, check temp every 30-60min.
Remove ribs from rack, put in double foil, drizzle honey over each one and stack ribs. Some apple juice in bottom and wrap well.
Back in BGE for 1 to 1 1/2 hours.
Take out of foil packet, brush with barbecue sauce, then on grill for about 20 min.
Take off grill and brush with more sauce.
