2 c. all-purpose flour
1 Tbs. baking powder
1/2 tsp. salt
1/2 c. cold unsalted butter (or margarine)
3/4 to 1 c. milk

Directions:

Mix flour, baking powder, and salt together in a bowl.

Cut in 1/2 c. of butter with a pastry blender until it resembles coarse crumbs. Pour milk in a well in the center, starting with just 3/4 cup. Use fork to stir in until almost completely mixed (don't overmix). Add the rest of the milk if needed, but careful not to make it too sticky.

Now turn out onto counter (or other floured surface) lightly dust with flour and form into a ball. Press down to about 1/2 inch thickness (Important: don't use a rolling pin - it flattens your dough and your biscuits won't be as light and fluffy). Cut out into desired size. A 3" biscuit cutter, or a cup turned upside down work well*.

Place on ungreased cookie sheet CLOSE TOGETHER, almost touching completely. This makes them rise up instead of flattening out.

Optional: Brush the tops with cream and sprinkle a little sugar or salt.
Bake at 450ºF for about 12 minutes or until lightly golden brown. Makes about 10 biscuits. This recipe can easily be doubled or tripled for gatherings.

*You can also pat out dough straight onto a baking sheet and just cut into squares and bake. Pull apart to serve.
