3 egg yolks
1 whole egg
3 Tbsp. cold water
1 tsp. salt
2 cups flour

1. I always doubled this recipe. Roll 1/4 of the dough at a time.

2. Beat yolks and egg well. Beat in water and salt. Measure flour and add mixing in with a spoon. (Dough will be stiff - knead in the last of the flour)

3. Roll each piece as thinly as possible (paper thin) on a lightly floured board. A noodle machine would be helpful.

4. Place between 2 towels until dough is partially dry (like chamois skin).

5. With a thin sharp knife cut into strips of desired widths. Shake strips and allow to dry before using or storing in a covered glass jar.

6. Cook in a generous amount of boiling salted water. Note: Older, drier noodles will take longer to cook until tender.

When grandma would come and visit, she would boil chicken bones (from another meal) to make a chicken stock and then make homemade noodles to put into the soup. They were so good.
