2 frozen pie shells, brown for 3-5 minutes
8 strips bacon fried crisp
1 large onion sliced
2 cups Swiss or cheddar cheese, grated
1/3 cup cheddar cheese
4 eggs
2 cups cream or half & half
1/4 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. white pepper

Directions:
Directions:
Brown shell. Brown bacon. Crumble and put on bottom of pie shell. Sauté onions in bacon fat then put on top of bacon. Pour cheese in on top of bacon. Beat eggs, cream and seasonings and pour over cheese. Bake in 450º for 15 minutes, then reduce oven to 350º for 10 to 15 minutes longer. Wrap edge of crust in foil to reduce excessive browning. You can add broccoli, or flaked ham, zucchini or mushrooms.
