2 eggs
1/4 cup
1 cup sugar
1 cup milk
3 Tbsp melted shortening
1 tsp grated lemon rind
4 cups sifted flour
4 tsp baking powder
1 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon

Directions:
Directions:
In medium sized bowl, beat with rotary beater until thick and light: 2 eggs, add 1/4 cup at a time, beating well after each addition: 1 cup sugar
Stir in:
milk,melted shortening & lemon rind.

Sift together onto piece of waxed paper:
sifted flour, salt, nutmeg & cinnamon .

Add sifted dry ingredients to egg mixture; stir until well blended (dough will be very soft). On lightly floured board or pastry cloth roll dough about 1/3 " thick. Cut with floured doughnut cutter. Place doughnuts a few at a time in 1 1/2 " fat heated to 370ºF (a cube of day old bread will brown in 1 minute). Fry doughnuts turning once 2 - 3 minutes or until golden brown. Remove from fat with slotted spoon. Drain on unglazed paper or paper towelling. Cool. If desired dust with granulated, confectioners or cinnamon sugar.

Sundae Special - Place doughnut on dessert plate; top with ice cream serve with chocolate or butterscotch sauce.
Breakfast Special - Split horizontally; toast; spread with butter; sprinkle with cinnamon sugar.
Lunch box surprise - Split horizontally; make into sandwich with cream cheese and jelly.
Buried Treasure - Place doughnut in bottom sherbet glass; cover with vanilla, chocolate or butterscotch pudding. serve with plain or whipped cream.
Dandy dessert - Cover doughnut with chocolate frosting sprinkle with chopped nuts or coconut.
