Pork casings- attach to faucet and rinse after soaking
10 lb. pork shoulder ground
1/3 c. salt
1 big onion, ground
pepper to taste
garlic ground, if desired.

Directions:
Directions:
Mix all ingredients, be sure and season to taste.
Fill mixture in casing, twisting links every so often.
Boil until done.

Grandpa Waishwell used to put a little hot water into mixture. I have good memories of Aunt Lillian (Grandma Drager to some) making this for my mom's surprise 63rd birthday party. She tasted the raw pork for seasonings. Jim has inherited the skill and technique, but I thought I should put in the recipe I grew up with. I remember how the house would smell when mom ground the onions!
