1 c butter, softened
1 c white sugar
1 c brown sugar, packed
2 eggs
1 egg yolk
2 t vanilla
1 (18oz) peanut butter
2 c flour
1 t baking soda
1/2 t salt
1 c chopped peanuts

Directions:
Directions:
In large bowl cream butter and sugars until smooth. Add eggs, yolk and vanilla, mix until fluffy. Stir in peanut butter. Sift together flour, baking soda and salt, stir into peanut butter mixture. Finally, stir in peanuts. Refrigerate the dough at least 2 hours.

Preheat oven to 350º. Lightly grease a cookie sheet or use parchment paper.

Roll dough into walnut sized balls. Place on prepared cookie sheet and flatten slightly with a fork. Bake 12-15 min. Cookies should look dry on top. Allow to cool for a few minutes on the cookie sheet before removing to cool completely on a rack.

I use crunchy peanut butter and don't use the chopped peanuts.
These cookies taste great when slightly undercooked.
