1/4 c butter or margarine, softened
1/2 c sugar
1 large egg
2 1/2 c All-purpose flower
1 T baking powder
1/2 tsp salt
3/4 c milk
1 tsp vanilla extract
1 1/2 cup fruit (peaches)
1/4 c sugar
3 T All-purpose flour
1/4 tsp ground cinnamon
2 1/2 T chilled butter

Beat 1/4 c butter until creamy. Add 1/2 c sugar. Add egg and blend. Combine 2 1/2 c flour, baking powder, and salt. Add flour mixture to butter mixture alternatively with milk. Stir in vanilla and stir in chopped fruit. Spoon muffin batter into greased or paper lined muffin pan 2/3 full. Combine 1/4 c sugar, 3 T flour, and cinnamon with 2 1/2 T butter for topping. Bake at 350º for 5 to 7 minutes or until toothpick comes out clean.
