Cookie Crust:
2 1/2 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
3/4 cup unsalted butter (cut in 12 pieces)
2 large eggs - lightly beaten
Filling: 2 cups applesauce
1/2 cup raisins
1 teaspoon vanilla
5 - 6 McIntosh Apples
6 tablespoons apple jelly divided
2 tablespoons unsalted butter
2 tablespoons sugar

Crust: in large bowl stir flour, sugar & cinnamon with pastry blender. cut in butter until crumbly, with fork work in eggs until blended. Gather in a ball. Pat cookie dough into bottom of 15x10x1" Jelly roll pan. Chill 30 minutes. Preheat oven to 375ºF, with fork pierce bottom of chilled crust bake 15 minutes or until light brown. While crust is baking, combine applesauce, raisins and cinnamon, set aside. Peel and core apples cut in 1/2" slices. Remove pan from oven brush with 2 tablespoons apple jelly, cool on rack. spread applesauce mixture over baked crust, arrange apple slices over lapping rows over applesauce. Drizzle apples with melted butter return to oven and bake 1 hour. In small skillet melt apple jelly brush over apples while warm.
