4 large eggs, beaten
1 quart buttermilk
1/2 cup bacon grease
4 cups flour
1/4 cup sugar
3 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons salt

Directions:
Directions:
1. To make fresh bacon grease (and have bacon with your pancakes): Line a cookie sheet with foil and bake 2 pounds of bacon at 350º for 30 minutes, or to desired crispness. Pour off grease and measure 1/2 cup for recipe. Drain bacon well on paper towels.

2. Beat eggs; add remaining ingredients in order listed and beat with rotary beater or wire whisk until smooth.

3. Grease heated griddle, if necessary. To test griddle, sprinkle a few drops of water. If bubbles skitter around, heat is just right.

4. Pour batter onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break. Turn and bake other side until golden brown. Serve immediately with butter and syrup, or your choice of toppings.

From Debbie: Try stirring one large peeled, cored, and finely chopped Jonathan apple, plus 1 teaspoon cinnamon into the batter. Or, one cup mashed ripe banana, plus 1/2 cup chopped toasted pecans is also really good.
This makes a really large recipe, but all ingredients can easily be cut in half.
