3-6 lbs of short ribs or
top / bottom round roast
1 carrot-peeled and cut into chunk sized pieces
1 stalk of celery
1 medium onion
salt and pepper to taste
Optional: tomato juice

Directions:
Directions:
Brown at 450º 15-20 minutes.
On top of stove: Over medium heat make gravy from drippings: measure fat, using equal amounts of flour to make a rue then add, chicken stock or water (stirring constantly) to desired consistency.

Put meat and gravy in Dutch oven, add a piece of carrot (chunk), piece of celery, medium onion. Put in ribs, cook, simmering, 1 hour (Pot roast 4 hours) over stove.

You can add tomato juice and add salt to taste when boiling. In each case make sure meat is well browned.
