Ingredients: 5 lbs. pork spareribs 1 Tbs. Kosher Salt Pepper 1 tsp. Garlic Powder Bay Leaves
1 1/2 cup Ketchup 1/2 cup Brown Sugar 1 tsp. Garlic Powder 2 tsp. instant coffee in 1/2 cup water OR 1/2 cup of strong coffee 1 tsp. Worcestershire sauce 1/4 tsp. cayenne pepper

Directions:Cut the spareribs in single-size portion (1 rib). Parboil in the salted season (salt, garlic and pepper) water. You can boil and simmer the spare ribs for up to 1 hour, depending on the size of each rib.
Meanwhile, prepare the BBQ sauce. Combine the ingredients and bring the sauce to a boil. Simmer up to 1 hour until the flavors of the seasonings are well-melded in the sauce.
Cook spareribs over hot coals, brushing it well with the BBQ sauce. |

Notes: When Uncle Frank and Aunt Pat invited our family to Sandbridge to their beach home, Aunt Pat prepared a similar recipe for us. What I remember most was that she used coffee in the BBQ sauce. A few years later, completely relying on my fond memory of that visit, I tried to recreate the recipe and feel that this is pretty close to what she had. I am happy to share it with you! The coffee gives it such an excellent zing to it. You also might want to consider brushing a bit of beer on it - since I remember Dad and Uncle Frank doing just that when they grilled it. By the way, this happened in the early 70's!!!
