Dressing:
2 Tbsp fresh lime juice
1 Tbsp honey
2 Tbsp water
1/2 tsp poppy seed
1/2 tsp grated orange peel

Salad:
1 cup jicama strips
1 seedless orange, peeled and sectioned
1 medium apple, unpeeled, thinly sliced
8 oz. pineapple chunks in juice, drained
Lettuce leaves

Directions:

In small jar, shake dressing ingredients. Set aside and chill. In medium bowl, mix all salad ingredients, except lettuce. Pour dressing over salad; toss lightly to coat. Cover and chill until serving time.
