"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
¾ cup sliced almonds
¾ cup sugar
¾ cup (1 ½) sticks unsalted butter, sliced and softened
½ teaspoons pure vanilla extract
1 2/3 cup all-purpose flour
½ teaspoon fine salt
1 cup powdered sugar

Directions:
1. Preheat the oven to 325º. Line two baking sheets with parchment paper.

2. Pulse the almonds and sugar in a food processor until very finely ground (blender can be used). Add the butter and process until smooth, about 1 minute. Scrape the dough off the inside of the bowl, if needed.

3. Add the vanilla and almond extracts and pulse to combine.

4. Add the flour and salt and pulse to make soft dough.

5. Turn the dough out onto a large piece of waxed paper and roll into a log about 15 inches long and 1 ½-inch wide. Wrap and refrigerate for 30 minutes.

6. Cut the chilled dough into ½ inch pieces and roll by hand into balls. Space the cookies evenly on the prepared baking sheets and bake until slightly golden, rotating the sheets once, 15 to 20 minutes.

7. Put the powdered sugar in a pie plate. Briefly cool the cookies on a rack, then gently toss in the powdered sugar until evenly coated. Return to rack, cool to room temperature, and then toss again in the powdered sugar.
