3 to 4 overripe bananas
1/2 c. sugar
1/3 c. melted butter
1 egg
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 1/4 c. whole wheat flour
1/2 c. rolled oats
1/3 c. walnuts or pecans (optional)

Preheat oven to 350 degrees.

Mash bananas in a large bowl. Add sugar, melted butter, and the egg and mix until combined. Mix in cinnamon, baking soda, baking powder, flour, oats, and nuts until moistened. Pour mixture into well-greased muffin tin.

Bake for 20 to 25 minutes or until toothpick comes out clean. Makes 12 regular, 36 mini, or 6 large muffins.
