3 c. oats (quick or regular)
1/2 c. olive oil
1/2 c. honey, agave nectar, or maple syrup
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. brown sugar
1 tsp. vanilla
1/2 c. almonds, walnuts, or other nuts
1/2 c. raisins, craisins, or other dried fruit

Preheat oven to 350˚F. Combine oats and spices in the large bowl. Whisk olive oil, honey/agave nectar/maple syrup, brown sugar, and vanilla in the small bowl until combined and pour on top of oat mixture. Use your hands to mix the granola, gathering up fistfuls (it gets a little messy!). Make sure the oats are completely coated in the brown sugar mixture. Spread granola onto a baking sheet and bake for 15 minutes. Take out the granola and stir, then bake for another 5 minutes. Take out the granola, stir, and add almonds or other nuts. Bake for 5 minutes, remove, stir, and then bake for a final 5 minutes. Allow granola to cool completely, add raisins (or other dried fruit), stir, and store in an airtight container.

Depending on the heat of your oven, you may not need to bake the granola as long. Pay attention to the color of the oats; they should be a medium-dark brown. If you get it too dark, it's burned!
