1 (15-ounce) can chunk pineapple in juice (reserve juice)
2 cups miniature marshmallows
1 egg, well-beaten
1 teaspoon flour
1 1/2 teaspoons white vinegar
1/2 cup sugar
10 juicy tart apples, cored and chunked, unpeeled
1 1/2 cups peanuts
1 (8-ounce) container Cool Whip

Directions:
Directions:
1. Drain pineapple and stir together with marshmallows in container. Cover and refrigerate overnight.

2. In saucepan, stir reserved pineapple juice, egg, flour, sugar, and vinegar until blended. Cover and refrigerate overnight.

3. Next day, combine both refrigerated containers, plus Cool Whip. Add chopped apples and peanuts; refrigerate. Can sprinkle with more chopped peanuts at serving time.

Mark's grandma always used to make this for "special" occasions (e.g. Easter). It is really yummy. It actually tastes better the longer you let it sit in the refrigerator (after assembling).
