1 or 2 cups colored vegetable rotini pasta (corkscrews)
Cut-up strips of hard salami, or pepperoni circles
Sliced ripe olives
Chopped green onion, stem and bulb
Chopped fresh tomatoes (or cherry tomatoes)
Sliced fresh mushrooms
Chopped sweet red bell pepper
Chopped fresh broccoli
Chopped fresh cauliflower
Fresh zucchini slices
Grated Parmesan cheese (fresh or shake-on)
Shredded mild Cheddar and/or mozzarella cheese
A sprinkle of granulated sugar
Crushed red pepper, to taste (optional)
Salt, to taste (optional)
Wishbone or Seven Seas Italian Dressing (vinaigrette style, not the creamy kind)

Directions:
Directions:
1. Boil pasta according to package directions. Don't overcook. Drain, rinse in cold water, and drain well.

2. Toss remaining ingredients in large bowl, using amounts of each ingredient that suits your tastes. Cover and refrigerate a few hours before serving, to blend flavors.

3. Can add more dressing after chilled, if salad seems too dry. Pass more Parmesan at serving time. Keeps well, covered, in fridge.

From Debbie: She made this a lot for summer family meals, and for potlucks. One cup of pasta makes a large amount, once you add all the other ingredients, and two cups makes a huge salad. No measurements, but if you use two cups of pasta, get at LEAST one large bottle of dressing.
