2 quarts young spinach leaves, stems removed
4-6 slices bacon, cut into ¾-inch pieces
Vegetable oil
½ cup chopped onion
1 cup sliced fresh mushrooms
¼ cup garlic-flavored red wine vinegar (or cider vinegar)
¾ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon coarse-grind black pepper
¼ teaspoon paprika
1 hard-boiled egg, chopped

Directions:

1. Turn spinach into salad bowl, tearing large leaves into smaller pieces.

2. Fry bacon until crisp; remove and drain; set aside.

3. Add enough oil to drippings in skillet to make 1/4 cup. Add onion and cook until onion is transparent. Add mushrooms and sauté one minute. Add vinegar, salt, mustard, pepper, and paprika. Heat to boiling.

4. Pour hot dressing over spinach in salad bowl. Toss until well-coated. Sprinkle with crisp bacon and chopped egg. Serve immediately.
