10 - 12 pound round of beef, 5 or more inches thick
2 c. each brown sugar and salt
2 T. black pepper

1 T. each ground nutmeg, cinnamon, ginger, allspice and black pepper
2 t. cayenne pepper

Directions:
Directions:
Use a 10-12 pound round of beef, 5 or more inches thick. Rub all sides to coat with mixture of 2 cups each of brown sugar and salt and 2 T. black pepper. Cover and refrigerate overnight.
Mix together 1 T. each of ground nutmeg, ground cinnamon, ground ginger, allspice, and black pepper, and 2 t. cayenne pepper. Cover meat with this mixture. Cover and refrigerate for 2 days.
The day before serving, place beef in baking pan. Bake at 350º, cover with foil, for 2 1/2 to 3 hours or until meat tests medium rare. Reserve pan juices.
Remove from oven and refrigerate until time to serve. On the day of serving, slice roast crosswise for small sandwiches. Before serving, pour pan juices over sliced beef and return to oven to heat through. Slices will hold their shape, but can be cut with a fork.
