1/4 cup (1/2 stick) butter
1/4 cup flour
2 cups half-and-half
1 can (12 ounces) beer
1 loaf (16 ounces) Velveeta cheese, cubed
1 tablespoon Worcestershire sauce
1/4 teaspoon cayenne pepper
1/4 teaspoon hot sauce
1/8 teaspoon salt, or to taste

1. Melt butter in a Dutch oven or large saucepan over medium-low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.

2. Gradually add half-and-half and beer; cook over medium heat, stirring constantly with a wire whisk, until thickened.

3. Add cheese; cook over medium heat until cheese melts. Stir in Worcestershire sauce, 1/4 teaspoon cayenne, hot sauce, and salt.

4. Ladle into bowls. Sprinkle with additional cayenne at serving time.
