2 tbsp. butter
2 tbsp. white or whole wheat flour
2 c. milk
1 tsp. nutmeg
1 tsp. cayenne
1 tsp. garlic powder
salt and pepper to taste
2 1/2 c. cheese of choice
8 oz. of macaroni
1/2 c. bread crumbs + 1 tbsp. butter

Preheat oven to 350ºF. Melt butter in a sauce pan. Add flour and cook for 3 minutes, whisking frequently. Pour in milk, add spices and simmer for 15 minutes. Add 1 3/4 cups of cheese and stir until cheese is melted. Pour in pasta and stir. Dump ingredients into a 9x13 pan.

Melt 1 tbsp. butter and mix with 1/2 c. of bread crumbs. Sprinkle mixture on top of macaroni and bake for 30 minutes.

I add crushed red pepper to ours because we like it spicy. We also use whole wheat rotini pasta and it tastes great. This can easily be doubled.
