2 lb small red potatoes, unpeeled, washed and sliced
1/2 cup unsweetened soy milk
4 T Dijon mustard
4 T white vinegar
4 T canola or vegetable oil
3 green onions, chopped
salt and pepper

Directions:
Directions:
1. Boil potatoes, drain and pour into large bowl.

2. MIx remaining ingredients and pour over the potatoes while still warm.

3. Salt and pepper to taste.

You could substitute the unsweetened soy milk with regular milk or any other milk alternative.
