1 1/4 c. all-purpose flour
1/2 c. sugar
1 Tbsp. baking powder
1/4 tsp. salt
2 c. All-Bran cereal
1 1/4 c. fat-free milk
1 egg
1/4 c. vegetable oil

Directions:
Directions:
Stir together flour, sugar, baking powder and salt. Set aside.

In large mixing bowl, combine all-bran cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into 12 muffin tins coated with cooking spray.

Bake at 400º for 20 minutes or until golden brown.


Reduced fat/calories variation:
Use 2 Tbsp. sugar, 2 Tbsp. oil and substitute 2 egg whites for 1 egg

Reduced fat/cholesterol variation:
Substitute 2 egg whites for 1 egg and 1/4 c. sweetened applesauce for 1/4 c. vegetable oil. Muffin texture may vary slightly.
