3/4 c. old fashioned rolled oats
3/4 c. all-purpose or whole wheat pastry flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp coarse salt
1/4 c. ground flax seeds
1/3 c. vegan carob chips (or not-so-vegan regular chocolate chips)
1 1/2 c. soy milk

Directions:

1. Using a small food processor, grind the rolled oats into oat flour.

2. In a medium bowl, mix the rolled oats, flour, baking powder, baking soda, sea salt, flax, and chocolate chips. Gradually blend in soy milk. Allow batter to rest for 5-10 minutes until the oats have soaked up the soy milk and the mixture is less runny.

3. Meanwhile, preheat a lightly oiled griddle over medium heat.

4. Pour batter (about 1/4 c.) at a time onto the prepared griddle. As the batter continues to thicken, it may be necessary to spread it out slightly using a small spatula. Cook 1-2 minutes or until edges are bubbly. Flip, and continue to cook until lightly browned.

Serve warm with real maple syrup!
