1 Brisket flat
1 tbsp. dried oregano
1 tbsp. chili powder
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. celery salt
1 tbsp. paprika
1 tbsp. black pepper
1 tbsp. salt
Worcestershire sauce
1 can of beer (or any other liquid for marinating)

Make cuts across the grain of the brisket, about ever 2 inches. The cuts should be about 3/4 of the way through the brisket. Mix all the dry ingredients together in a bowl. Add enough Worcestershire sauce to the spices to make a thick paste. If you want your brisket a little sweeter then add 1 tbsp. brown sugar to the mix. Spread the paste on all sides of the brisket making sure to get it down in the cuts that you previously made. Place the brisket fat side down in a pan and add the beer. Cover and let it sit overnight.

Smoke the brisket to your liking. I usually smoke it for 3-4 hours on the smoker. I then move it to a baking dish, add some liquid (dripping from the smoking), cover with foil. Place this in the oven set at 250-300° from 2-4 hours, respectively. If you don’t have a smoker, add a little liquid smoke to the paste and bake in the oven at 250° for 7-8 hrs.
