Sauce:
3 tbsp.. olive oil
3/4 cup onion (chopped)
1 clove garlic (minced)
2 (6 oz.) cans tomato paste
1 tbsp. sugar
1 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. oregano
1 bay leaf
4 cups canned tomato sauce

Meatballs:
1 slice firm bread
1 lb. ground beef
2 eggs
1/2 cup Parmesan cheese (grated)
2 tbsp. parsley
1 clove garlic (minced) I always add more
1 tsp. oregano
1 tsp. salt
Dash of pepper
2 tbsp. olive oil

Directions:
• Make sauce. Heat oil in heavy pan. Add onion and sauté. Add garlic and cook 1 minute.

• Stir in tomato paste, 1 cup water, the sugar, salt, pepper, oregano, bay leaf, & tomato sauce. Simmer uncovered 30 minutes.

• While sauce is simmering; make meatballs. Soak bread in water 2 or 3 minutes. Drain and squeeze partially dry. Place bread in bowl w/beef, eggs, cheese, parsley, garlic, oregano, salt & pepper. Mix gently until combined. Form into 20 small meatballs.

• Heat olive oil in skillet. Brown meatballs without crowding on medium high heat.

• Remove bay leaf from sauce and add meatballs.

• Simmer 30 minutes longer

Serve over hot pasta.
