Begin your pancakes using the 1 cup of starter stored in your refrigerator.
The night before mix: 2 cups flour 2 cups milk 1 cup starter (from the fridge)
After mixing, leave out of refrigerator on cabinet over night in a covered bowl or container allowing some room because it will grow and bubble a little.
*VERY IMPORTANT: The next morning, separate out 1 cup of starter and store back in the airtight container in your refrigerator for next time.

Directions:To make your pancakes: Mix the following separately, and then add to remaining starter: 2 tsp soda 3 tsp baking powder 1 Tbs sugar 2 eggs ¼ cup olive oil 1 tsp. salt
Preheat your iron skillet before hand, because when the following is mixed into the remaining starter, it will bubble quickly, so make sure your bowl is large enough, and your pan is ready to cook. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ If you desire more pancakes for company, mix one extra batch per night, per number of extra batches needed, or if you normally cook a large amount, you can double or triple your starter. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
My starter is made with 1 cup of milk and 1 cup of unbleached flour. I would suggest making your own starter by combining these 2 ingredients and leave on your kitchen counter either overnight or until mixture looks bubbly. Then refrigerate your starter until your ready to use it.
Using a covered glass jar, keep 1 cup of starter in your refrigerator and use at least once a month or once every other month to keep active. The more frequently the better. |

Notes: I received my starter in 1987 in Huntsville, AL from my neighbor and friend. My friend received her starter from an elderly lady she took care of in Idaho. Her elderly friend received her starter in 1936 – from Basque sheep herders in Idaho.
I have always kept my starter active since 1987. I have also taken my starter from Alabama to California, to Argentina, and to China, and now to Arizona while living in these areas.
