Pie Crust
One-14 ounce can artichoke hearts
Two to Four Green Onions (your taste)
One tbsp. flour
One Cup Cheddar Cheese
One Cup Pepper Jack Cheese
3/4 Cup Milk
6—Eggs

Oven 350 degrees

Pie Crust – poke holes in crust with a fork and bake for five minutes then remove from oven.

Soften a few green onions in 3 tablespoons of butter. Add one tablespoons of flour, simmer one minute, remove from heat.

Squeeze juice out of drained artichoke hearts – 14 ounce can, chop lightly, then stir into onion mixture.

Whisk together egg and milk. Layer artichoke onion mixture into pie shell with cheese. Pour egg mixture over and distribute it evenly with a fork.

Bake until firm. Cool slightly before cutting.

Serves well with salad for dinner also.

Eliminate the pie crust and you’ll have a low carb frittata !
