11 oz. cream cheese
1 unbeaten egg
1/3 c. sugar
12 oz. semi sweet chocolate chips

1 c. water
1/3 c. oil
1 T. vinegar
1 t. vanilla
1 c. sugar

1 1/2 c. flour
1/2 t. salt
1 t. baking soda
1/4 c. cocoa

Miniature cupcake-size baking pan and liners.

Beat in small bowl: cream cheese, egg, 1/3 c. sugar. Add chocolate chips. Refrigerate. Beat in large bowl: 1 c. water, 1/3 c. oil, 1 T. vinegar, 1 t. vanilla, 1 c. sugar. Add 1 1/2 c. flour, 1/2 t. salt, 1 t. baking soda 1/4 c. cocoa. Mix well. Fill cupcake liners 1/2 full with chocolate mixture. Drop in 1 t. cream cheese/chocolate chip mixture. Bake 20-25 minutes at 350º. Do not over bake.

This recipe makes at least 60 mini cupcakes and they freeze very well. I usually make several batches and give them as Christmas gifts. It's an easier recipe than it looks like on paper and the results are delicious!
