1 1/2 c vegetable oil
3 eggs
2 c sugar
1 tsp. vanilla
3 c flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 c chopped nuts
1 c raisins
3 c fresh apples, peeled and diced

Directions:
Directions:
Sift together dry ingredients and set aside. Mix well the oil, eggs, sugar, and vanilla. Add the flour mixture and mix well. Fold in the apples. Add nuts and raisins. Put in a greased and floured 9x13 pan and bake at 325º preheated oven for 1 or 1 1/2 hours.

My mother made this cake and it was delicious. Sometimes we would eat it plain and sometimes with a caramel icing. Mom didn't put raisins in it when she made it.
