5 pound bag onions, peeled
4 ounces butter or margarine
1 1/2 teaspoon ground black pepper
2 tablespoons paprika
2/3 cup flour
3 quarts canned beef bouillon
2 teaspoon salt
1 cup white wine, optional

1. Slice onions 1/8-inch thick. Melt butter, place onions in it, and sauté slowly, for 1 1/2 hours, in a large soup pot. Add all other ingredients except bouillon, and sauté over low heat for 10 minutes.

2. Add bouillon and simmer for 2 hours. Adjust color to a rich brown with Kitchen Bouquet. Adjust salt to taste and put in refrigerator, covered, overnight.

3. To serve, fill ovenproof casserole or individual ovenproof bowls with hot soup. Top with three 1 1/2-inch slices of French bread and top with 1 1/2 ounces Swiss cheese. Place under broiler until brown, about 5 minutes.
