4 T. butter
1 med. onion, chopped
1/4 c. flour
8 ham slices
2 c. milk
2 c. cheddar cheese
6-8 boiled potatoes
salt and pepper

Directions:
Directions:
Melt butter in large fry pan. Saute onion until transparent. Add flour to make roux. Add milk and stir until thick. Add cheese and stir until melted. Slice the boiled potatoes and add to the cheese mixture. Salt and pepper to taste. Place in 9x13 baking dish and bake at 350 degrees for 30 minutes. The ham can be placed decoratively on top of the casserole before baking or heated separately in foil. Serves 6-8. Recipe can be doubled.
