2 lbs. young organic carrots,
3 - 4 T. olive oil,
splash of herb or red wine vinegar,
sea salt and freshly ground black pepper for seasoning,
a few sprigs of fresh thyme
3 -6 cloves of garlic, whole and scattered about or crushed and scattered

Directions:
Directions:
Preheat oven to 400°F. Toss carrots with a good amount of olive oil, a splash of vinegar, dash of salt and pepper, the thyme sprigs and the garlic cloves. I like to toss it all by hand to cover and mix it all well.
Place in a roasting tray or earthenware dish, cover tightly with aluminum foil and cook for 30 to 40 minutes until just tender. Remove the foil and cook for a further 10 minutes until the carrots have browned and caramelized nicely.

Delicious hot or cold.

When cooking the carrots covered by the foil, they steam and exchange flavors with the herbs and garlic. When the foil is removed the carrots start to roast and sweeten.
