Salt & Pepper

Sauerkraut

Directions:
Season two matching sides of ribs with salt and pepper. Lay down first side. Spread stuffing on top. Place other side of ribs on top so stuffing is sandwiched between. Tie securely with string to hold stuffing in. Lay on rack in uncovered roasting pan. Bake at 325º until tender for about 2 hours. Remove string and serve hot on a bed of sauerkraut.

Personal Notes:
The recipe doesn't say but it seems that the meaty side of the ribs must be on the outside to hold the dressing in the natural curve of the ribs. Ray's favorite.
