1 1/2 lb of beef short ribs, trimmed
3/4 tsp salt, divided
1/2 tsp black pepper
1/2 cup all-purpose flour
2 tbsp olive oil, divided
2 1/2 cup water
3/4 cup chopped carrot
1/2 cup chopped onion
1 8 oz pkg of cremini mushrooms, sliced
3 garlic cloves, minced
1 tbsp tomato paste
3 quarts of water
8 oz uncooked medium egg noodles

Directions:
Directions:
Sprinkle short ribs with salt and pepper. Dredge in flour. Heat a large skillet over medium high heat and add 1 tbsp oil to pan. Add beef to pan and cook 4 minutes or until browned turning occasionally. Add 2 1/2 cups water, scraping pan to loosen brown bits and bring to boil. Cover, reduce heat and simmer for 1 hour and 45 minutes. Remove beef from pan, cover and keep warm.
Remove and reserve cooking liquid from pan.

Heat pan over medium heat and add remaining 1 tbsp oil to pan. Add carrots and onions and cook 4 minutes, stirring occasionally. Add mushrooms and 1/2 tsp of salt stirring occasionally. Add garlic and cook for 30 seconds stirring constantly. Add tomato paste and cook for 30 seconds stirring frequently. Stir and reserve cooking liquid and bring to a boil. Reduce heat and simmer for 6 minutes.
Bring 3 quarts water and 1 tbsp of salt in a large saucepan and add noodles. Cook for 5 minutes. Drain and serve noodles with ribs and sauce.
